    As the temperatures dip below the 70’s for the first time this season, it brings out all the nostalgic fall feelings in me. There is truly just something about fall. The air is cleaner and easier to breathe, the time spent outside it actually enjoyable, and the food is incredible. Especially the soup.

    Soups have always been one of my favorite go to meals, and especially when we have a cooler day, I love to let it simmer on the stove all day and dig into it for dinner. This has always been a favorite of ours, and one of the first of the season that I make. It also is always a crowd favorite, so it is great to feed a lot of people.


    • 1 TBS butter
    • 2 TBS oil 
    • 1 small onion (diced)
    • 2 cloves of garlic
    • 16 oz sausage 
    • 3 medium potatoes (cubed)
    • 32 oz chicken broth
    • 2 cups of milk (I used whole, but whatever your preference is) 
    • 4 stalks of kale (peeled from stem and chopped)
    • Salt  (to taste)
    • Pepper (to taste)
    • Thyme (1/2 tsp)
    • Rosemary (1 sprig)


    1. Melt butter and oil over medium heat in a large pot 
    2. Add onion and garlic to the pot and stir until translucent (about 6 minutes) 
    3. Add the sausage, and cook until brown
    4. Add the cubed potatoes, and cook for about 2 minutes 
    5. Add the chicken broth, milk, and seasonings, and bring to a boil 
    6. Reduce to simmer, and let cook for about 30 minutes (or until potatoes are tender) 
    7. Add chopped kale and cook for additional 10 minutes
      * The longer you let the soup simmer, the softer the potatoes and kale will be, and the more flavor that will be absorbed
